Ever since I started eating mostly plant-based foods, I very rarely have those sweet cravings hit me out of no where. If it does happen, usually a small piece (or two) of dark chocolate does the trick. Yesterday, however, I really wanted something else.
Something creamy, chocolate-y and chewy with just a hint of crunchiness. This chocolate fudge is vegan, sugar-free and very easy to make. Did I mention that it’s delicious, too? Oh yes, it is. It’ll sure satisfy those sweet cravings and you can also enjoy it guilt-free. What’s not to love?
Vegan Chocolate Fudge
1 cup of dates, pitted soaked in water for 1 hour
1/2 cup of almonds
2x 1/4 cup of cacao powder
2 ripe bananas
1 TBS natural cashew butter
2TBS natural peanut butter
Vanilla extract
pinch of sea salt
stevia drops or coconut palm sugar (optional)
finely shredded coconut flakes for topping
1. Line a glass baking dish with parchment paper (I used an 8×8 Pyrex dish). Place your soaked dates, almonds and 1/4 cup of cacao butter in a blender, blend until smooth.
2. Using your hands or a fork press the date and almond batter into your baking dish. The batter will be very thick.
3. Put bananas, another 1/4 cup of cacao powder, nut butters, a drop of vanilla extract and sea salt in a blender and blend until smooth. If you want it to be a little sweeter you can also add a few stevia drops or some coconut palm sugar.
4. Once the batter is smooth pour it on top of the date/almond mixture. Top it off with some finely shredded coconut flakes (the natural, sugar-free kind) or with some sea salt.
5. Put your fudge in a freezer for about 2 hours, or until it’s firm.
If you don’t finish the whole batch at once (like we almost did :P) store the rest in the freezer. This is seriously a perfect treat and since it is Friday, I do have to say that this stuff goes great with a nice glass of wine :) .
