I love sandwiches. When I was little, warm, fresh rye bread with butter, tomato and a little bit of salt was my favorite thing to eat. I don’t really eat butter anymore, but I found something better: avocado.
For one sandwich I use:
two slices of Ezekiel bread (or three, depending on how hungry I am ☺ )
½ ripe avocado
handful of pea sprouts
one medium kumato tomato
sprinkle of sea salt
I first toast the Ezekiel bread until it becomes very crunchy, then I spread the avocado on each slice and sprinkle some sea salt on top. I prefer to soften my avocado with a fork in a bowl and use it on the bread like a spread, rather than slicing it. I then take a generous amount of the sprouts (they are high in calcium, vitamin B, Vitamin C, and beta-carotene), put it on top of the avocado and finish it off with a slice of kumato tomato. Kumato tomato comes from a special tomato plant that naturally produces dark fruits. I once had a friend over and while I was making her something to eat she said “Ew, your tomatoes are so ugly, aren’t they rotten?” [Who calls a tomato “ugly”?] No, kumato tomatoes have a much darker color and taste so much sweater than regular tomatoes-that’s why I love them.
Ever since I decided to get healthy and eat only things that are “good for me” I eat avocados pretty much every single day. Avocados provide 20 essential nutrients, as well vitamins C, E, K, fiber, and are also an excellent source of potassium. Even though avocados are high in fat (which is why a lot of people are afraid to eat them), most of it is monosaturated fat, also referred to as “good fat” that helps to reduce bad cholesterol levels in blood and lowers risk of stroke and heart disease.
Ezekiel brad is actually one of my recent discoveries (thank you Gabby) and is actually considered to be the healthiest bread you can eat. It’s made from organic, sprouted whole grains, contains no added sugar and is a great source of fiber.
I love having this for breakfast with a glass of hot water and lemon, or for lunch, with green tea and honey. Spinach with a bit of feta cheese or some arugula and poached egg also goes great with avocado.
